    Ellen’s last birthday cake

    I believe Ellen died on November 1, 2012, even the police told me she had been dead some days before they discovered her and the investigative detective told me he believed she died on that night or the next day, based on the evidence he observed.

    However, the official date of her death, the day the police discovered her, is November 8, 2012.

    That next weekend, we were planning to celebrate her 63rd birthday. The 10th of November.

    In preparation, I had planned on making her a very special birthday cake. I bought a very special real unique Bundt cake pan, real cool spiral design. I bought those special glazed apricots from Neiman Marcus, something I hadn’t done in over twenty years ago, too expensive. But, I wanted this cake to be real special.

    That day, November 10th, her birthday, was a real difficult day for me. I kept expecting her call from my parking lot saying, “I’m here, come help me bring in the food and wine.”

    That was something I heard almost every weekend for over twenty-five years, with a few exceptions where we drifted apart for a year or two, here and there.

    I had toyed with the idea of putting 63 candles on it as a joke; she loved stuff like that and would have peed her pants. But, I figured it was probably a fire hazard. I would have just put one candle so at least she would have had something to blow out.

    My friend in Fr. Collins, B.A., who knew Ellen from our trips to Arcosanti together and my talking about both to each other over all those years, insisted I make the cake, if nothing else to honor Ellen and to give to John Bill and Sharon when they came to Phoenix.

    So, I proceeded. I took photos at each step. I decided to make it as much fun as possible. I will post the photos below this.

    I followed all the instructions perfectly.

    Well, this was my first Bundt cake, as it turns out, the bottom, which was at the top of the pan, turned out to be so hard, it would have taken a chain saw to slice it. The top, which was at the bottom of the pan, was still raw………….

    All that effort and money to make the perfect cake for Ellen and it was a total flop.

    Now I know to put a Bundt cake on the bottom rack. How was I supposed to know? It is just unfair, gals just know this stuff instinctively, and guys just are handicapped because we just don’t get stuff like that.

    I am sure Ellen had quite a laugh at me……………

    I am sure she stood there and watched me make a complete fool out of myself.

    See, our routine was, she would stand in my kitchen and read me her latest story she had written while I cooked all the yummy food she had brought for me to prepare. So, I know as I was cooking that cake, she was standing there, just howling laughing at me.
